Percy’s Fish and Chip Shop, Sullivan Court, Kings Reach, opened for business last week, as proud owner Kevin Barton embraced his roots in the industry.

Percy’s is named after Kevin’s grandfather who ran fish and chip shops with his son Chris in Suffolk from 1938 until the turn of the century when Kevin’s father retired from the business.

Kevin said: “Percy’s 2020 is using the same values and techniques, but has made sure the business is right up to date whilst using traditional methods with the best modern developments, and making sure it caters for changing tastes, too.

“I lived above a fish and chip shop for most of my childhood and learnt everything there was to know.

“I have often wondered if I could recreate the great taste we had back then using today’s modern technology. Importantly, we are taking into consideration the changing diets and healthier eating habits that we are becoming familiar with, including gluten free requirements.”

He added: “We have been working on this for a couple of years to get it just right and to find the right location. The secret is in our batter!”

Percy’s fish and chips will be cooked in traditional beef dripping – not the easier processed palm oil options which are now commonplace.

There will also be a gluten free option cooked using completely separate fryers.

“Despite 2020 being a really tough world in retail it feels really good to be doing something very positive and generating new jobs,” added Kevin.

“I am really excited to find out what customers think, too. I’ve chosen Biggleswade because it fits just right, and I know customers are very choosy about their fish and chips. We live nearby and I know the town well; now I want them to get to know Percy’s Fish and Chips.”

Percy’s welcomed in its first customers on December 10, and last Friday MP Richard Fuller and mayor Madeline Russell were present at its official opening ceremony.

Opening times: 11am - 9pm Tuesdays - Saturdays. (Closed Sundays and Mondays). A delivery and

online order service will launch soon.
